Management Studies for Culinary Staff
CLASSROOM BASED TRAINING
This course is designed for all staff working in Hospitality interested in developing and updating the Management Skills required in today's hospitality environment.
The qualification provides the skills and knowledge for an individual to be competent in a supervisory or team leading role in the Hospitality sector. Work would be undertaken in various settings, such as in restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops.
Units
The program is a Skill set of units leading to a Statement of Attainment. The skill set forms part of SIT40407 Certificate IV in Hospitality (Commercial Cookery) and covers 10 units comprising of 7 core units and 3 elective units. This program has been packaged to meet industry skill sets and the Victorian purchasing guide requirements.

Entrance Requirements
- Students must be employed in an Ascet approved commercial kitchen or similar suitable environment.
- All students must undertake and be competent in a Language, Literacy and Numeracy (LLN) assessment.
Job Roles
Job roles and titles vary across different industry sectors. Possible job titles relevant to this qualification include:
- Chef
- Food and beverage supervisor
- Chef de partie
- Front office supervisor
Duration
This program is delivered over a 4 month period with 8 contact session of 4 hours duration. A sample time table would allocate classes every two weeks. ASCET TAFE recommends a minimum allocation of 16 hours per week to complete tasks in between mentored sessions (2 weeks interval).
You may be able to reduce the duration of the course by applying for Recognition of Prior Learning or Credit Transfer. The recognition and assessment of skills acquired through life experience, work experience or non-accredited/accredited training programs may be requested through the Recognition of Prior Learning process. AQF Qualifications and Statements of Attainment issued by other Registered Training Organisations will be recognised.
Delivery
The program is delivered as a combination of self-directed learning and classroom based sessions. Students are provided with training materials for each unit, including theoretical knowledge, self-directed exercises, reference materials and are expected to manage time effectively in order to progress through units at an appropriate pace.
Classroom based sessions around each of the units and activities connected to the theory enables students to develop a theoretical and practical understanding of the topic.
Assessment
Assessment is used to provide students with feedback on their progress and to measure their skills and knowledge against the training qualification requirements and those of the industry. Assessment of competency is through the collection of a range of evidence. Learners will be required to complete a range of assessment activities that forms a portfolio of evidence including workbooks, activities, assignments, classroom observation and oral questioning.
Outcome/Future Pathways
Students who successfully complete the skill set will be awarded with a Statement of Attainment. Students could then go to complete the SIT40407 Certificate IV in Hospitality (Commercial Cookery) through a Workplace based training and assessment pathway or an RPL pathway.
