This qualification provides the skills and knowledge for an individual to be competent in a range of kitchen functions and activities that require the application of a limited range of practical skills in a defined context. Work would be undertaken in various hospitality enterprises where food is prepared and served, including restaurants, hotels, catering operations, clubs, pubs, cafes, cafeterias and coffee shops. Individuals may work with some autonomy or in a team but usually under close supervision.

Units

Students must complete a minimum of 16 units to achieve this qualification consisting of 11 core units and 5 elective units. This Program has been packaged to meet industry skill sets and the Victorian purchasing guide requirements.

Entrance Requirements

  • All students must undertake and be competent in a Language, Literacy and Numeracy (LLN) assessment.
  • Students must be currently working in a role at an organisation approved by ASCET TAFE

Job Roles

Job roles and titles vary across different industry sectors. Possible job titles relevant to this qualification include:

  • Breakfast cook
  • Short order cook
  • Fast food cook

Duration

The program is conducted over a maximum period of 18 months (full-time), or 36 months (part-time). ASCET TAFE recommends an average time of 10 months for the training of this qualification. ASCET TAFE will maintain an average of 50 nominal hours of training commenced each month. The training timetable outlines this for the instructor, trainee/apprentice and workplace.

You may be able to reduce the duration of the course by applying for Recognition of Prior Learning or Credit Transfer:. The recognition and assessment of skills acquired through life experience, work experience or non-accredited/accredited training programs may be requested through the Recognition of Prior Learning process. AQF Qualifications and Statements of Attainment issued by other Registered Training Organisations will be recognised.

Delivery

The training program is delivered via work place based learning. Trainees are guided through the program with the assistance of an instructor from ASCET TAFE and the workplace supervisor. It is a requirement of the program that all Apprentices/Trainees are to be withdrawn from routine work duties for a minimum of 1.5 hours per week averaged over an eight week cycle, for the purpose of structured training This course is also available as a Traineeship. Assessment

Assessment is used to provide students with feedback on their progress and to measure their skills and knowledge against the training qualification requirements and those of the industry. The assessment process may include written and practical presentations, observation, and may require some time away from the workplace to complete assignments and self-directed exercises.

Outcome / Future Pathways

Upon satisfactory completion of the program, students will receive SIT20307 Certificate II in Hospitality (Kitchen Operations), Nationally Recognised.

Participants who successfully complete this qualification have the option of a future pathway into the following: SIT30707 Certificate III in Hospitality or SIT30807 Certificate III in Hospitality (Commercial Cookery)
